Almond Diamonds

1 C shortening (butter flavor)
1 C sugar (granulated)
1 t salt
1 t baking soda
1 egg (beaten)
1 t almond extract
3 C flour
about 1 tablespoon canned milk or less

In separate bowl combine flour, salt and soda. Cream shortening
and sugar, beat in egg and almond extract. Fold in dry ingredients.
Add just enough canned milk to make a smooth dough. Chill a while.
Working with small portions of dough at a time, roll out to 1/4"
thickness and cut into diamond shapes.

Bake at 375F for 5-7 minutes. Transfer to wax paper covered
countertop. Cool.

Makes about 4 dozen, depending on size. Stores well; if there's
any left by the time they've had a chance to cool, that is.


Variations:

Sprinkle lightly with sugar before baking if desired.

After cool, apply light glaze and top with sliced almonds.
