Anzac Cookies 1 cup rolled oats 1 cup all-purpose flour 2/3 cup granulated sugar 1 cup grated or flaked coconut 1 tsp. baking soda 1/8 tsp. salt 1/2 cup unsalted butter 3 TBS. Lyle's Golden Syrup Preheat oven to 325:. Grease cookie sheet. In a large bowl, combine oats, flour, sugar, coconut, baking soda and salt; set aside. In a small saucepan, combine butter and golden syrup. Place over medium heat, stirring occasionally, until butter is melted. Pour into flour mixture; stir to combine.
Gather dough by well rounded teaspoons; it is very crumbly, so you will need to use your fingers to lightly pack the dough onto the spoon. Invert mounds of dough, 1 1/2 inches apart on prepared baking sheet, shaping with your fingers if necessary.
Bake 10-13 minutes or until deep golden brown. Remove from oven; let stand on cookie sheet 3 minutes. Cool on racks. Store in airtight container at room temperature for 1 week; can be frozen for longer storage. This is a crisp cookie. Makes about 3 dozen
