CRISPY CHEDDAR CRACKERS

3/4 c. unbleached flour
1/2 tsp. paprika
3 Tbsp. melted butter
1 c. grated cheddar cheese (4 oz.)
1/4 c. ground walnuts
1/4 tsp. onion powder
1-2 Tbsp. cold water

Oven temperature 350 F. Baking time 10-12 minutes.

Spray baking sheet with non-stick vegetable oil coating. Mix flour,
walnuts, paprika and onion powder. Cut in the butter until mixture
resembles coarse crumbs. Stir in the grated cheese.

Sprinkle 1 Tbsp. water over mixture tossing with a fork. Continue
adding water until all is moistened (might not require the full 2
Tbsp. given). Form dough into a ball; chill for about 15 minutes.

Preheat oven (350 degrees F) while dough chills. On a slightly
floured surface, roll chilled dough 1/8 inch thick. Cut with a
2-inch cookie cutter (or cut rolled-out dough with a knife into
squares). Place on prepared baking sheet.

Bake for about 12 minutes (10-12 minutes, depending on how crisp
you like them); cool on wire rack.
