Chocolate Chip Cookies
Yields 2 dozen

1/2 cup butter, room temperature
1/4 cup granulated sugar
1/3 cup brown sugar
1 egg
1/2 tsp vanilla
1 1/8 cup flour, sifted
1/2 tsp salt
1/2 tsp baking soda
1 cup chocolate chips
1/2 cup nuts, coarsely chopped, optional

Preheat oven to 350 degrees. Beat butter and sugars in a large bowl
until light and fluffy. Add egg and vanilla and mix well. Mix flour,
salt, and soda in a small bowl. Add dry mixture to batter and mix
well until blended. Stir in chips and nuts. Drop dough by small
spoonfuls 2 to 3 inches apart on an ungreased cookie sheet. Flatten
each scoop with the back of a spoon. Bake until centers are slightly
soft to touch, 11 to 14 minutes. Let cool 5 minutes. Remove from
sheets and cool completely.
