Graham Crackers

1 1/3 cups whole wheat flour
1 cup all purpose flour
1/2 light brown sugar, packed
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ginger
1/4 cup unsalted butter, cut into slices
1/3 cup honey
5 tbsp cold water
1 tsp vanilla extract

Preheat the oven to 325F. Place the flours, brown sugar, baking
soda, salt, spices in a bowl. Stir well to combine. Cut in butter
well with a pastry blender. Add remaining ingredients and stir
until mixture forms a ball. (Can also do this in the food processor.)

Divide the dough in half and cover half with plastic wrap. Grease
a large cookie sheet. Dust the dough with flour and roll it out
to cover the entire cookie sheet (about 1/8 to 1/4 inch thick).
Cut the dough into even squares and lightly score the dough through
the middle of the squares with a knife. Prick the dough evenly
with a fork. Repeat with remaining dough on another greased cookie
sheet. Bake in the preheated oven for 15-18 minutes, or until
firm to the touch. Cool on racks.
