Grostoli (Crisp Cookies)

3 eggs, lightly beaten
5 cups sifted all purpose flour
1/2 cup sugar
1 tsp baking powder
1 cup milk
1 tsp salt
1 grated lemon rind (optional)
1 oz brandy (2 TBS)
lard
confectioner's sugar or honey

Mix all ingredients except lard and confectioner's sugar. Work
dough to resemble smooth noodle dough and roll as thin as a dime.
cut into rectangles, 2 by 3 inches, or desired shape of diamonds
or triangles. Deep fry in pure lard. Drain well on paper towels.
Dust with powdered sugar or dip in honey. Drain honey dipped
cookies on plates or cookie sheets.

Makes about 8 dozen cookies
