Hamantashen

2/3 cup fat
1/2 cup sugar
1 egg
3 tbsps. milk or water
1/2 tsp. vanilla
2 cup sifted flour

Cream fat and sugar. Add egg and continue creaming until smooth.
Add liquid and flavoring and stir in sifted flour till a ball of
dough is formed. Chill 2-3 hours or overnight.

Form balls of dough the size of a medium apple and roll out to 4-6
inches in diameter. On each round place a ball of filling, bring
edges to gather to form a triangle, pinching the seams together
from top down to the corners.

Brush tops with egg yolk and bake for 30-40 minutes at 350-degrees
until lightly browned.


Poppy Seeds and Honey Filling

2 cup poppy seeds
1 cup water or milk
1/2 c.. honey
1/4 cup sugar
1/8 tsp. salt
2 eggs

Combine poppy seeds, liquid, honey, sugar and salt in saucepan.
Cook over moderate heat till thick, stirring to prevent scorching.

Cool, then add eggs and beat well. (if eggs make mix too thin,
return to heat and stir for 1-2 min.)


Dried Fruit Filling

1/2 cup each seedless raisins, dried apricots and stones prunes
dash of salt
1/2 cup dry bread Or cake crumbs
4 tbsp. honey

Combine all ingredients and cook over boiling water till honey is
melted. Stir well and allow to cool. If too thin add bread crumbs.
If too thick add lemon juice.
