Lime Meltaways

3/4 cup unsalted butter, room temperature
1 cup confectioner's sugar
2 Tablespoons freshly squeezed lime juice
Zest of two limes
1 Tablespoon vanilla extract
1 3/4 cups plus 2 Tablespoons all purpose flour
2 Tablespoons cornstarch
1/4 tsp salt

Cream butter and 1/3 cup sugar until fluffy. Add the lime juice,
zest and vanilla until fluffy.

In another bowl, whisk together flour, cornstarch and salt. Add
to butter mixture. Beat until combined.

Roll into log and chill 1 hour.

Heat oven to 350. Line baking sheets. Slice logs into 1/8" rounds.
Place rounds on sheets. Bake until barely golden (about 11-15 min)
While still warm, place cookies in bag with the rest of the
confectioner's sugar. Toss gently to coat (they are tender, they
may break apart).
