Ma'amoul

2 lbs smeed (semolina)
2 cups butter
1/2 tsp salt
1 pound walnuts
2 cups sugar
2 tbs orange flavored water
1 cup powdered sugar
3 tbs cake flour

Melt butter and pour over smeed. Rub with both hands until all
butter is absorbed. Add 3 tablespoons cake flour, salt and enough
cold water to make a hard dough. Work into small balls. Mix chopped
walnuts, sugar and orange flour water together. Open inside of
balls with your finger and put some of the walnut stuffing inside.
Close and bake on a baking sheet at 350F until firm and a little
yellowish on top. Cool and sprinkle with powdered sugar.
