Madeleines

3 large eggs
1/2 cup granulated sugar
2 teaspoons vanilla
2/3 cup cake flour
1/4 cup butter, melted

Preheat oven at 375 degrees.

Beat eggs, sugar, and vanilla in bowl with electric mixer 10 minutes
or more it turns light, pale, and thick. Sift and fold one-fourth
of flour into batter, then another one-fourth of flour and one-half
of melted butter. Continue alternatively to fold in remaining flour
and butter. Do not stir in any milky residue of melted butter. Do
not overmiX.

Prepare the madeleine molds but lightly buttering and flouring the
molds. Remove any excess flour from molds. Pour the mixture into
the mold about 2/3 way to the side. Bake for around 15 minutes.
(note this might vary between ovens). Make sure the madeleine comes
out yellow and not too brown.
