Madeleines

3/4 c butter
2 eggs
1 c sugar
1 c sifted cake flour
1 tbsp rum or brandy
1 tsp vanilla or 1 tsp. grated lemon rind

Preheat oven to 450F. Melt butter and allow to cool.

Heat eggs and sugar till lukewarm in a double boiler, stirring
constantly; remove from heat and beat till thick but light and
creamy, incorporating as much air as possible.

When egg mixture is cool, add sifted flour gradually, then the cool
melted butter, then the flavorings. Bake for about 15 minutes in
small, lightly greased muffin tins or a Madeleine pan.
