Vanishing Oatmeal Cookies (soft)

1 cup margarine
1 tsp. ground cinnamon
3 cups quick oats
1 cup firmly-packed brown sugar
2 eggs
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1 cups raisins (optional)
1/2 cup granulated sugar
1 tsp. vanilla extract

Heat oven to 350 F. Beat together margarine and sugars until creamy.
Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon
and salt; add to creamed ingredients and mix well. Stir in oats
and raisins; mix well. Drop by rounded tablespoonfuls onto ungreased
cookie sheet. Bake 10 - 12 minutes or until golden brown. (Do not
overcook.) Cool 1 minute on cookie sheet; remove to wire rack.
Yields 3 1/2 dozen cookies.

Notes: High altitude, increase flour by 1/4 cup.
