Peanut Butter Temptations

1/2 cup butter
1/2 cup creamy PB (I used about 1/8 cup crunchy)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1 and 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
mini peanut butter cups

Cream the first 4 ingredients. Blend in the egg and vanilla and
then the dry ingredients. Roll into 1" balls and place in mini
muffin tins. Bake at 350 for 8 minutes. Place muffin tins on
racks and place a PB cup in the center of each cookie. Cool
completely in muffins tins and remove and drizzle tops with melted
semi-sweet chocolate.

These cookies are great they're perfect to give as gifts for the holidays and I haven't met a person yet who doesn't like them; even people who don't like peanut butter liked these

I made these this morning, but had 1 problem with the recipe. Nowhere did it mention how many cookies it makes! A problem with you need 4 dozen cookies for a cookie swap! I doubled the recipe and it yielded 5 dozen cookies, so I guess the recipe yields approx. 2 1/2 dozen. The mini PB cups worked great, but tried the new PB Hershey Kisses on some. While they tasted fine, they melted into a puddle pretty quickly in the cookie while the PB cups hold up their shape much better. For the 5 doz. made, it took a little over an hour; including cleanup (would have been quicker, but I did not have enough pans to keep baking while the others cooled in the pans).
