PEANUT CRISPS

75 g butter, softened
50 g castor sugar
2 Tbsp chopped salted peanuts
50 g brown sugar
1 small egg, beaten
100 g self raising flour
1/2 tsp mixed spice
extra castor sugar for sprinkling

Beat butter and sugar together until light and fluffy, then beat
in the peanuts, brown sugar and egg. Sift together and spice, then
fold into the mixture until evenly mixed.

Shape into walnut sized balls and place on baking sheet spacing
them a reasonable distance apart. Flatten with fork. Bake at 190
C for 12 - 15 minutes. Sprinkle with castor sugar and leave to
cool on a wire rack. Pack into a freezerproof container with
plastic wrap or foil between each layer. Label and freeze.
