Frosted Pumpkin Cookies
Yield: 5 dozen

1 c butter or margarine; softened
3/4 c granulated sugar
3/4 c brown sugar; packed
1 lg egg
1 c canned pumpkin
2 ts vanilla extract
3 c baking mix
1 ts ground cinnamon
1/2 ts ground nutmeg
1 1/2 c pecans; chopped, toasted
prepared homestyle frosting or prepared cream cheese frosting; 12-16 ozs.

Heat oven to 350F. In large mixer bowl, beat butter, sugar, and
brown sugar until light and fluffy. Add egg; beat well. Add
pumpkin and vanilla. Add baking mix, cinnamon and nutmeg; beat on
low speed to combine. Stir in pecans. Place tablespoonfuls of
dough about 2 inches apart on greased baking sheets. Bake for
10-12 min. or until golden brown. cool on baking sheet for 2 min.
Remove to wire rack to cool completely. Frost tops of cookies with
vanilla frosting. Garnish with toasted pecans if desired.
