Rootbeer Cookies (Rollouts)
1 cup margarine 1 1/2 cups confectioner's sugar 1 egg 1 tsp vanilla 1/4 tsp rootbeer flavored oil 2 1/2 cups flour 1/2 tsp baking soda 1/4 tsp cream of tartar
Cream margarine and confectioners' sugar, beat in egg, add vanilla and rootbeer oil. Add dry ingredients which have been sifted together. Wrap in plastic wrap and chill dough - 3 hours. Roll out 1/8" thick in shape of rootbeer float mugs. Bake at 375 degrees 5-7 minutes.
Icing
1 1/2 cups confectioner's sugar 3 Tbsp butter/margarine 1/4 tsp root beer oil 1 1/2 Tbsp milk
Combine ingredients. Color icing brown to outline mug--use vanilla prepared tube frosting for "frothy" top.
