Russian Tea Biscuits

1/2 cup sugar 6 Tbls. butter 1 egg yolk 1/2 tsp vanilla 1 Tbls cream 1 1/8 cups flour, sifted 1 tsp baking powder raspberry jam or other tart jam, optional raisins, sprinkled evenly over cookies, optional
Beat butter until fluffy, gradually add sugar, beat until light and creamy. Beat in egg yolk. Stir in vanilla and cream. Sift together flour and baking powder, stir into butter mixture. Chill dough for 1 - 2 hours. Roll out dough until very thin . Cut into oblongs, spread with: jam or raisins.
Cover cookies with meringue topping(recipe below) and bake on lightly greased baking sheets at 350 deg. F. for 10 - 12 minutes.
Meringue Topping
1 egg white 5 Tbls sugar 1 tsp cinnamon 6 Tbls chopped nuts
Whip egg white until stiff, slowly add sugar, beating constantly. Fold in cinnamon and nuts.
