Sand Tarts

1/2 pound butter (115g)
1 1/2 cups sugar
1 egg
2 cups flour
1/4 teaspoon salt
1 egg white, slightly beaten
1 teaspoon cinnamon

Preheat the oven to 400 degrees. Beat the butter until softened,
then slowly add 1 1/4 cup of sugar, continuing to beat until creamy
and smooth.

Add the egg and mix well. Add the flour and salt and beat until
well blended. chill the dough for 30mins. Sprinkle a surface lightly
with flour and roll out the dough very thin, then brush it with
beaten egg white. Mix the remaining 1/4 cup of sugar with the
cinnamon and sprinkle over the dough. Cut into desired cookie shapes
and placed on ungreades cookie sheets. Bake for about 6 minutes or
until the edges of the cookies turn slightly golden. Remove from
oven; let cool a minute or two before removing to racks to cool.
store in airtight container.
