400g cake flour 100g bread flour 125g brown sugar 120g castersugar 250g butter 20g mixed spice add extra cinamon 10g lemon zest 45g sour milk or water 4g salt 5g bicarbonate of soda 3g carbonate of ammonia
Sieve together flours, spices, and raising agents. mix together butter, sugars, salt, lemon and liquid. Mix to a crumb and then to a smooth dough. Rest dough in fridge.
Depending on size of your Speculaas molds scale the dough at 85g 350g 500g (ie: weigh it out into pieces this big)
Dust the mold with rice flour. Roll the weighed dough pieces to a rectangle about the same size as the Speculaas pattern. Press the dough piece into the mold. Then very gently pull the dough back from the edge of the pattern, turn the mold over on to a greased baking sheet and the Speculaas should fall out.
Traditionally they are decorated with blanched almond halves emphasising headdress , feet, knees, waistband etc.
Brush the speculaas with egg and milk mixture when they have been decorated and again before they go into the oven.
Bake at 180 C. small ones 25 mins medium ones 35 mins large ones 45 mins
The Speculaas are supposed to represent a boyfriend or girlfriend...
