Crisp Sugar Cookies
Makes about 4 dozen

3/4 cup shortening
1 cup sugar
2 eggs
1/2 teaspoon lemon extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
Coloring sugar

In a mixing bowl, cream shortening and sugar. Add eggs and lemon
extract; mix well. Combine the flour, baking powder and salt;
gradually add to creamed mixture and mix well. Cover and refrigerate
for at least 2 hours or until easy to handle. On a floured surface,
roll dough to 1/8-inch thickness. Cut with 2 1/2-inch cookie
cutters. Place a greased baking sheets. Sprinkle with colored
sugar. Bake at 400 F for 7 to 9 minutes or until lightly browned.
Cool on wire racks.
