Thumbprint Cookies
1/2 C. sugar
1 C. butter, softened
1 tsp. vanilla
2 egg yolks
2-1/4 C. all-purpose flour
1 tsp. baking powder
1/4 C. jam or any flavor preserves
In medium bowl, beat sugar, butter, vanilla, and egg yolks until
light and fluffy. Gradually add flour and baking powder, mix well.
Cover with plastic wrap and refrigerate 30 minutes. Heat oven to
350 degrees F. Shape dough into 1-inch balls. Place 2 inches
apart. With thumb, make an imprint in the center of each cookie.
Bake 11-14 minutes. Spoon 1/4 teaspoon jam into the center of each
cookie. Cool completely.
