Vinegar Cookies
Makes about 4 dozen cookies

1 cup butter, softened
1 cup sugar
1 1/2 cups all-purpose flour
1 Tbsp. distilled white vinegar
1/2 tsp. baking soda

In large bowl, with mixer at low speed, beat margarine or butter
with sugar until blended. Increase speed to high, beat until light
and fluffy, about 3 minutes. At low speed, beat in flour, vinegar,
and baking soda until mixed, occasionally scraping bowl with rubber
spatula. Cover bowl with plastic wrap and refrigerate dough 1 hour
or until easy to handle.

Preheat oven to 350 degrees F. Drop dough by rounded teaspoons,
about 2 inches apart, onto ungreased large cookie sheet. Bake 17
to 20 minutes, until cookies are set and edges are golden. Let
cookies remain on cookie sheet 30 seconds, then with pancake turner,
remove cookies to wire rack to cool completely. Repeat with remaining
dough.
